Liquid nitrogen, the cold steamy stuff used by Mr. Henry and his science classes to make and instantly freeze ice cream right in front the eyes of gawking students. Students were amazed to watch the wave of steam that rises when the super-cold, liquid nitrogen gas hits the liquid ice cream base — and the almost instantaneous freezing of the liquid into a solid.

Mr. Henry and his students demonstrated how they can use liquid nitrogen to freeze various items, such as Cheetos and bananas. Students enjoyed the experience of actually being able to affect changes of state in matter from solid, liquid, and gas.
